Sustainable enjoyment
Biodynamic, seasonal, organic and local - we support our local economy, and wherever possible, give preference to organic and biodynamic products.
Therefore we serve:
- Smoked ham (Speck) and cold meats from local livestock, prepared by the Biobeef Abattoir in Toblach.
- Beef from a local producer, “Schneiderhof” in Sexten
- Diary products from the Upper Pustertal Diary ( Hochpustertal Sennerei)
- Cheese from local producers, “Lechnerhof” in Prags and Ahrntal.
- Bread from an organic farmer, Bernard Feichter in Toblach
- Biodynamic wines from South Tyrol (Alois Lageder, Weingut Manincor) and Austria (Heinrich Gernot, - Nikolaihof, Josef Umathum, Hans und Anita Nitnaus, Weingut Fritsch), alcoholic spirits from Vinschgau.
- Once a week we prepare an evening meal consisting predominantly of organic ingredients
As these products are locally produced by small enterprises they are not always available regularly or in the quantities we require. Therefore we can't depend entirely on them and have to fall back on wholesale distributors. You surely know about this problem should you also be aware of the value of healthy nutrition at home.
