Dumplings with speck


Dumplings with speck are a delightful specialty of our region. They can be enjoyed either in a hearty broth or coated in melted butter and sprinkled with grated cheese.

Today, our chef Nicholas is delighted to share one of his finest recipes with you.


180g of cubed dry bread

180g of Speck (smoked bacon)

100ml of milk

1-2 eggs

15 g of mountain cheese



Begin by mixing all the ingredients in a bowl until all the ingredients have combined well.

Next, weigh out portions of the dough, roughly 70g each, to shape your dumplings.

Let it rest for 10 minutes.

Shape the dumplings and cook for 8-10 minutes in salted water.

After cooking, you can serve them with melted butter and, if desired, sprinkle with Parmesan cheese.
